Fancy a panad?
As it’s St David’s Day, we’d like to share with you a delicious recipe that we came across whilst living on the beautiful Isle of Anglesey. It’s for a biscuit called “Teisen Aberffraw” and is quite the local delicacy! To be completely authentic you’ll need a clean scallop shell like the one in our photograph.
Ingredients
50g caster sugar
100g salted butter
150g plain flour
Method
Pre-heat the oven to 160c/320f
Cream the sugar and butter together until pale and fluffy.
Sift in the flour and mix well to form a dough.
Roll out on a floured surface to around 1cm in thickness and cut out your biscuits using a round scone/cookie cutter (8cm) then place on a baking tray lined with baking parchment.
Use a clean scallop shell to imprint its distinctive pattern on each biscuit then bake for approximately 12 – 15 minutes.
Remove from the oven, sprinkle with a little extra caster sugar and leave to cool on a wire rack.
These delicious biscuits can be stored in an airtight container or, as we prefer, enjoyed immediately with a nice “panad” (cup of tea!) 😉
